Cook the diced bacon and capsicum in a fry pan.
Slice a thin layer off the bottom of the mushrooms so that they have a flat base.
Remove the stalk from the mushrooms.
Stuff the mushrooms with the bacon and capsicum filling and season with salt and pepper to taste. You may also use herbs and spices of your choice.
Add cheese on top of each mushroom and top off with parsley.
Place mushrooms in the camp oven and place it on top of the hot coals. The hot coals should also be placed on top of the camp oven.
Cook the mushrooms in the camp oven for 20 minutes, checking every 10 minutes.
